How do you to make vegetables delicious while still keeping the nutrients?
So I’ve read some recipes online for vegetables but a lot of them say to add tons of butter ( I don’t want to add fat unless it’s olive oil) or to stir fry and boil ( which i thought drains the nutrients from the vegetables). I know I can eat them raw but does anybody have any recipes or ideas on how to cook them and still retain the beneficial nutrients? Thanks!
Steaming veggies is the best way to minimize the loss of vitamins and minerals while cooking. But there’s nothing much you can do to make them taste better.
A drop of butter, cheese or white sauce sure make the veggies go down better.

One option is to steam the vegetables in a steamer. The veggies will keep their flavour and retain their nutrients. Season the steamed veggies with a pinch or two of salt and pepper.
Another option is to toss them in 1 tbsp of olive oil on a baking sheet and roast them in the oven at 400F for about 15 min OR put them in a grilling basket and grill them on the barbeque.
A favorite recipe of mine is tossing together chopped green bell peppers, chopped red bell peppers, chopped red onions, sliced mushrooms, sliced zucchini and pineapple chunks in a grilling basket with 1 tbsp of olive oil, 1 tsp of Italian seasoning and a 1/4 tsp each salt and pepper. Grill over medium-high heat until the veggies are slightly charred on the edges, about 10 minutes.
